Lynn and David Freeman have been farming in Meaford Ontario, since 1986. In 1998 The Freeman’s started growing garlic, which they processed into a variety of Gourmet food seasoning spices. They have created three incredible-tasting spices thus far; Gourmet Canadian Six Spice, Gourmet Garlic Spice, Gourmet Garlic Scape Spice, along with  Gourmet Garlic Powder, and Gourmet Garlic Scape Powder.

Bay Organics Inc. received The Ministers award for the Premier's Agri-Food Innovation Excellence Award in 2007, and are fully certified with the USDA National Organic Program. For the past eight years Bay Organics Inc. have been researching and improving the cultivation of organic garlic and processing methods for the purpose of retaining the garlic’s nutraceutical properties, mainly its concentration of allicin, associated sulphates and  other mineral ingredients, to the best degree possible.

Working with the University Of  Guelph, Bay Organics Inc. in research, is Dr. Chung-ja Jackson a former Project Leader at the Guelph Centre for Functional Foods, and Dr. Bruce Holub a professor in the Department of Human Biology and Nutritional Sciences. Dr. Jackson’s research confirmed that the organic garlic grown on Freeman farms contains higher levels of allicin than any other garlic tested. It also confirms that freeze-drying is the best method for retention of high levels.  Dr. Holub proved that garlic was effective in lowering cholesterol in humans.

 Freeman Farms is enriched with a heavy mineral and clay content in the soil, producing organic garlic with naturally high levels of allicin. This high-quality raw garlic is not by itself sufficient to get a respectable finished product. The organic garlic is freeze-dried to retain its properties and extend shelf life. Other conventional methods of drying cause most of the value in garlic to be lost during the process. David and Lynn’s garlic preserves up to 80% of the allicin in its freeze-dried form. There are currently no commercial garlic products for human or animal consumption, which have enough allicin concentrations to be  effective to an extent.

 A demand for garlic based feed supplements of high allicin content for horses already exists, and the potential market for such feed supplements for meat producing animals like cattle and pigs even higher. The use of antibiotics to meat producing livestock was banned in 2006 by the European Union and is likely to be banned in North America as well.

Many people today are searching for nuraceuticals because of apprehensions over antibiotic resistance, as well as the side effects and cost of antibiotics. The antibiotics available to veterinarians are no longer as effective as they were in the past. Most veterinarians believe that nutraceuticals, besides being effective as medicine for infections, were beneficial for the treatment of chronic conditions (eg. arthritis and respiratory aliments). They also believe that such products help boost the immune system preventing infections, repel pests, and even improve hair quality. The Freeman’s organic freeze-dried garlic will be in high demand for the maintance of good health and prevention of chronic diseases in both humans and animals, as an alternative to antibiotics for animals. Horses and animals raised for human consumption (cattle, hogs, sheep, chickens, etc.) would probably be healthier if they were dosed with garlic instead of antibiotics or in combination with them.

People are likely to benefit from eating the meat of edible domestic animals treated in this manner. Many owners of horses (racing horses and pleasure horses alike) all over the world (e.g. in Canada, the U.S.A., Europe, and Australia) would be willing to use freeze-dried garlic products containing consistently high levels of allicin which would benefit the health of their animals. Our products have the advantage of actually being less expensive than garlic products produced with conventional methods that have lower allicin levels and lack quality control.
